Warm Saffron and Almond milk Porridge

This recipe is a good source of essential nutrients, including fiber, vitamins, and minerals such as iron and magnesium. Oats contain tryptophan, a precursor to serotonin, a neurotransmitter that plays a role in mood regulation.

Ingredients:

1/2 cup rolled oats

1 1/2 cups almond milk or regular milk.

A pinch of saffron threads

1 tablespoon brown sugar or jaggery (as per your taste)

1/4 teaspoon ground cardamom

A handful of sliced almonds, chopped pistachios

A handful of raisins (optional)

Ghee (clarified butter) for garnish (optional)

Instructions:

Start by heating a small pan and gently toasting the saffron threads for a minute. This enhances their flavor and aroma. Then, remove the saffron from the heat and let it cool.

In a saucepan, bring the milk to a gentle simmer. Once it starts to simmer, add the toasted saffron threads, cardamom, and sweetener (brown sugar or jaggery). Stir well to dissolve the saffron and sweetener into the milk.

Add the rolled oats to the simmering milk mixture. Reduce the heat to low, and let the oats cook for about 5-7 minutes, stirring occasionally. The porridge will thicken as it cooks.

When the porridge reaches your desired consistency, remove it from the heat. If you want a thinner porridge, you can add more almond milk.

Serve the saffron and almond milk porridge hot in a bowl. Garnish with sliced almonds, raisins, chopped pistachios, and a drizzle of ghee if desired.
