Rice Congee

This Congee is a simple, nourishing, and easily digestible dish, making it gentle on the digestive system. In Ayurveda, the ingredients in rice congee, such as ginger, turmeric, and spices, are believed to help balance the doshas (Vata, Pitta, and Kapha), promoting overall harmony in the body. The spices and warming ingredients in this congee help stimulate Agni, the digestive fire, aiding in the efficient digestion and absorption of nutrients.

Ingredients:

  • 1/2 cup white basmati rice

  • 6 cups water

  • 1/2 teaspoon grated fresh ginger

  • 1/4 teaspoon ground turmeric

  • Pinch of black pepper

  • 1/4 teaspoon cumin seeds

  • 1/4 teaspoon fennel seeds

  • 1/4 teaspoon coriander seeds

  • 1 cinnamon stick

  • 2-3 cardamom pods

  • Ghee for serving (optional)

  • Chopped fresh cilantro for garnish

    Method

  • Rinse the rice thoroughly under cold water until the water runs clear.

  • In a large pot, combine the rice and water. Bring it to a boil, then reduce the heat to low and let it simmer, partially covered, for about 30-40 minutes or until the rice is soft and the mixture thickens.

  • In a small pan, dry roast the cumin seeds, fennel seeds, and coriander seeds until fragrant. Grind them into a powder using a mortar and pestle or a spice grinder.

  • Add the grated ginger, ground turmeric, black pepper, ground spice mixture, cinnamon stick, and cardamom pods to the rice. Stir well and continue simmering for an additional 10-15 minutes.

  • Remove the cinnamon stick and cardamom pods before serving.

  • Serve the Ayurvedic rice congee warm. Optionally, drizzle with ghee and garnish with chopped fresh cilantro.
